This family recipe by my friend Anamarija is being prepared by the third generation in the family. And when they are baked at Christmas holidays, they bring back memories of childhood and the taste of grandma’s cookies. Memories of postman knocking on the door and delivering a cardboard box full of sweet stars with jam, neatly folded between sheets of baking paper, do not fade either.
Ingredients
500 g (17.6 oz) soft flour
160 g (5.6 oz) powder sugar
1 egg
250 g (8.8 oz) butter
50 g (1.76 oz) pork lard
some grated orange rind
knifetip baking powder
apricot jam
powder sugar for sprinkling
Preparation
Prepare a pastry from flour, sugar, eggs, butter, lard, grated orange rind and baking powder. Wrap in plastic foil and leave in refrigerator for an hour.
Roll the pastry thinly on a slightly floured surface. Cut with molds (half of the amount must have a hole in the middle). Bake in the oven heated to 180 °C (356°F) for about 8 minutes. Baked cookies must remain white.
Slightly heat up the jam and add some rum to gain flavour and smoother texture. Use a teaspoon to place jam to the baked pastry without the holes. Sprinkle those with holes with powder sugar, and then stick them to those with jam.
Serving
With hot beverages or dessert wines.
Note
This amount of pastry will give you about 60-70 cookies. Keep them in tin boxes so they remain crisp.
