Barley with beans (ričet) is a genuine winter dish. The combination of legumes and grains with root vegetables and smoked meat represent a complete meal. Complement it with homemade corn bread.
Ingredients
150 g (5.25 oz) beans (type zelenčec)
400 g (14 oz) dried ribs
250 g (8.75 oz) barley
salt
50 g (1.75 oz) onion
2 carrots
1 parsley root
50 g (1.75 oz) celery root
3 tablespoons oil
bay leaf
pepper
1 tablespoon tomato paste
1 tablespoon rough flour (type 400)
1 teaspoon wine vinegar
Preparation
Soak the beans overnight. Cut the dried ribs into small pieces. Cook them separately. Add a bit of salt to the beans. Once the water boils, discard the water, add fresh water and continue to cook until beans and dried ribs are tender. In a third bowl, cook barley a add a bit of salt.
Clean onions and root vegetables and cut them into cubes. Add oil to a deep pan, saute the onions, carrots, parsley and celery. Add some water and simmer until vegetables are tender. Add cooked beans and barley, pour in enough water so that ričet remain thick. Season with salt and pepper and add the bay leaf. Briefly boil, add the tomato paste and flour whisked in a bit of water. Finally add the cooked cured meat cut into small pieces. If desired, add the vinegar.
Serving
Serve ričet (barley with beans) with homemade corn bread.
