Every home in Dalmatia and the coastal region has its own recipe for the fritters (also known as frite, fritule or pršurate). Common ingredients are flour, eggs, yeast, sugar, raisins and some brandy.
They can be added with potato, grated apples, in latest versions yoghurt or ricotta, or they can be without yeast. Fast to prepare, aromatic and soft… continue the sequence once you try them :).
Ingredients
50 g (1.75 oz) raisins
3 tablespoons of prošek (Dalmatian dessert wine)
300 g (10.5 oz) skuta (ricotta)
50 g (1.75 oz) sugar
2 eggs
1 orange
1 lemon
half a teaspoon ground cinnamon
100 g (3.5 oz) soft flour
frying oil
For sprinkling:
powder sugar
Preparation
Soak the raisins in prošek. Mix the skuta (ricotta), sugar, eggs, cinnamon and grated lemon rinds of lemon and orange. Gradually add sieved flour to the mix. In the end add raisins with prošek.
Heat up the frying oil well. Use two spoons to put the dough in oil. Turn them during frying to get an even colour. Remove the fried fritters with a slotted spoon and put on absorbent paper to remove the excess grease.
Serving
Sprinkle with powder sugar and serve still warm.
