On this plate we choose recognizable foods of Kvarner region and arrange it into unique combination of the flavor. From škripavac cheese to potato polenta, salted pilchards, olives and polenta bread.
Ingredients
mushrooms
bacon
little oil
salted pilchards
pitted green olives
polenta bread
Škripavac cheese
fresh tomatoes
fresh parsley leaves
potato polenta
goat quark cheese
dried figs
Preparation
Wipe the mushrooms with kitchen towel to remove excess soil and cut off the stems. Cut the bacon into small pieces and fry in a pan with a little oil to make it crispy. In the remaining fat fry the mushrooms on both sides. Fill them with bacon.
Wrap the salted anchovies around olives and fasten with toothpicks.
Cut the polenta bread into slices, put on it Škripavac cheese and add tomato slices sprinkled with freshly chopped parsley.
Cut the potato polenta into slices and arrange quark on the top. You can, if desired, combine quark with dried figs.
Serving
Serve with homemade rakia.
